Continue ReadingOur fettuccine with creamy tomato sauce is perfect when you want an Italian-style meal but don’t want spaghetti again. While simple and delicious, boring old fettuccine gets kicked up a notch with some delicious additions. While this particular version does not include diced chicken, Don and I agreed that it would be a perfect addition for the next time we have it. So, feel free to throw in some cooked chicken breasts, or even cooked shrimp, and enjoy!

Continue ReadingHappy Monday! I hope you had a great weekend and that you have something fun in store for today. It’s a rainy, dreary day here and I wish I was in bed, curled up with a good book. Today is Mo’s unbirthday (you gotta do things like that when you have twins), so it’s going to be a crazy, fun-filled night. We have been celebrating unbirthdays at our house for a couple of years now… I wanted the kids to have a day that was all about them, rather than having to always share a birthday. We don’t go crazy……

You know those days when you stand in front of the cupboard and none of the ingredients you have on hand lend themselves to anything spectacular? That’s how I created nacho noodles! A quick and easy meal that can be changed up to include whatever taco-y ingredients you might have on hand! This recipe is reminiscent of my nacho noodle casserole, but includes an enchilada-type sauce instead. Enjoy!
