Are you always in a rush in the mornings? Do you skip breakfast just to get to work or the kids to school on time? Then, my friend, these easy Omelet Muffins are going to be your saving grace! It never fails, no matter what time the kids and I get up, it is always a rush to get out the door in time. We hardly ever have time for breakfast – and when we do, it is usually something from a drive-thru. Definitely nothing nutritious or filling! When I first heard about omelet muffins, I was perplexed. How does…

Continue ReadingI love chicken and dumplings, but who has time to roll out dough and cut dumplings on a busy weeknight? Not this girl. My friend taught me how to make these easy chicken and dumplings several years ago when we were living together and pretending to be adults. I’ve made them since. I am sure my grandma is rolling in her grave – she used to make her dumplings from scratch. But, these taste just as good as grandma’s. To be honest, this is the only way I make chicken and dumplings anymore. It is so time-consuming to make, roll…

Continue ReadingI love ordering Arroz con Pollo in restaurants. I love the mix of flavors and heat that goes into the dish. I will never be that good of a cook, but… this is a pretty darn good rendition of this dish! It takes about an hour in the oven, but you can throw it together and forget about it until it is time to eat. Serve it with a little (OR ALOT) of jalapeno peppers and you are good to watch the game!

Continue ReadingI love blueberries. Especially blueberry muffins. But, there are sometimes I just don’t want to mess with the whole “from scratch” process when I need a quick breakfast for the kids and I. Somedays, I just wish I had an in-home chef! This recipe has been in my recipe box for ages. Recently, one of the kids said they wanted blueberry muffins, so I pulled out this “oldie but goodie” recipe for quick blueberry muffins. This recipe is so easy – it is literally five ingredients! Plus, you can use fresh or frozen blueberries! It can’t get any easier than…

Continue ReadingThere is nothing better than a hot bowl of creamy tomato soup on a cold winter’s day – paired with a gooey, grilled cheese sandwich. It’s heaven. I was so tired of buying canned, condensed tomato soup – I wanted to try to make my own so I could make it healthier and sneak in some veggies in. This recipe is so easy – it is literally four ingredients! I do caution you though – it is best when you buy the best ingredients you can afford. You can make this easy tomato soup with canned tomatoes – which is…

Continue ReadingMmmm. Country green beans. I remember snapping green beans with my grandma on the back porch. The fresh “snap” when breaking off the tips was a common sound in my childhood. We always worked with two bowls and a bag. The beans came out of the bag, we snapped them and then the ends went in one bowl and the beans went in the other. Whenever grandma had the bowls out, I knew we were getting green beans with dinner. I am a late joiner to the instant pot scene. I had one, but hardly ever used it. That was…

Continue ReadingWhile recently recovering from minor surgery, I had the opportunity to read Amanda Wen’s new book, The Songs That Could Have Been. This is the second book in Sedgewick County Chronicles series that I have reviewed – and Amanda is quickly becoming my favorite new author! I love how her stories transport you to another time and place and time. It was perfect for “escaping” from the soreness of surgery! After a devastating tailspin in her late teens, Lauren Anderson’s life is finally back on track. Then a chance meeting with Carter Douglas, her first love and the man who…

Continue ReadingI recently was given the opportunity to read Carolyn Miller’s new book, Midnight’s Budding Morrow. While this was a typical romance novel, I loved how Carolyn focuses on women who are slightly older and have fewer opportunities for marriage. In fact, she has an entire series dedicated to whisking readers away from the hustle and bustle of 1810’s London, and into the Lake District of England – her Regency Wallflower series. Sarah Drayton is eager to spend time with her best friend at her crumbling Northumberland castle estate. Marriage is the last thing on her mind and the last thing…

Continue ReadingI had the pleasure of reading Janyre Trump’s debut novel, Shadows in the Mind’s Eye. The book transports you to 1940’s Hot Springs, Arkansas where Charlotte’s husband Sam has returned from serving his country in the Pacific theater. He is not the same man who Charlotte fell in love with – he is broken and believes he is crazy. When Sam tried to kill his own brother and claims to see outlaw men on the mountain, Charlotte begins to question his sanity and her safety. In the tradition of Hitchcock with a hint of psychological thriller, Shadows In the Mind’s…
