Crispy Oven Chicken

Julia

You know when you are eating healthy, sometimes you just get a hankering for something “bad” like fried chicken. Β I love fried chicken, but I can’t make itΒ to save my life. Β So, in my search for healthy and easy fried chicken, I have tried using crackers, breadcrumbs, and cereal – but nothing was as crispy as good old chicken fried in oil. Β Until now…

Ingredients

  • 1 pound skinless chicken tenderloins
  • 1 box flavored stuffing mix i.e. sage, chicken, etc
  • 1 cup milk
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 2 teaspoons black pepper
  • 2 teaspoons garlic powder

Method

  1. Put stuffing mix in a large zipper bag. Pound until cubes are crunched up into desired size.
  2. Place milk in one bowl and stuffing crumbs in second bowl.
  3. Dip chicken tenderloins into milk, then into crumbs, ensuring crumbs cover chicken. Discard remaining stuffing mixture and milk.
  4. Place tenderloins in baking dish prepared with cooking spray.
  5. Repeat with remaining tenderloins.
  6. Season with paprika, salt, pepper, and garlic powder.
  7. Bake at 400 degrees for approximately 25 minutes or until chicken is no longer pink inside.

I love crispy fried chicken and the bad part is I CAN cook fried chicken. We don’t eat it a lot but THIS we can eat anytime I want it! I would have never thought to use stuffing mix! I use breadcrumbs and it just doesn’t compare to the real thing. I will definitely be pinning and trying this:)

Hopped over from Tickle My Tastebuds and so glad I did:)
