In medium skillet, spread slices of roast beef around. Cook over medium low heat, stirring continuously for approximately 6-7 minutes.
Create 4 equal mounds of roast beef, top each with several jalapenos, and one slice of cheese. Allow cheese to melt slightly.
Remove and place on bun. Serve hot.
Notes
This sandwich got its name from a diner in Williams, AZ. They have a similar sandwich on the menu. I asked why it was called an SOB. The server said its because when you bite into it, the jalapenos make you say "SOB."
