  • You're a Lifesaver Thank You Card | Mini Van Dreams

    My You’re a Lifesaver Thank You card was an idea born out of a VBS decoration that I had made.  The theme last year was “Under the Sea” and our classroom was the inside of the submarine.  I made life rings out of paper plates, red construction paper, and twine.  I thought it would make a great Thank You card, so I set about creating one to enter into the fair.  Here is what I came up with – a simple to make, nautical themed thank you card that is perfect for everyone!

  • Carnitas with a Twist | Mini Van Dreams

    A couple of weeks ago, I was cleaning out my recipe box and came across a handwritten recipe for carnitas.  I am not sure who gave it to me or where it came from.  But, I had a frozen pork loin in the freezer and thought “what the heck!”  It was a rather odd mix of ingredients, as you will see… I threw everything in the Crockpot and hoped for the best.  Oh my.  Best.  Carnitas.  Ever.  So moist and delicious… we ate them as soft tacos with homemade pico and then made rice bowls with them a few days…
