Carnitas with a Twist

A few weeks ago, I came across a handwritten recipe for Crockpot Carnitas in my recipe box. I am not sure who gave it to me or where it came from, but it sounded interesting with the oranges and lemon. I piled all the ingredients into my Crockpot and hoped for the best. Oh my. Best. Carnitas. Ever. We ate them as soft tacos that night, and then made rice bowls the next day.

Easy Crockpot Carnitas with a Twist

Delicious and easy Crockpot meal that can be used for tacos, rice bowls, sandwiches, wraps, and more!
Prep Time 10 minutes
Cook Time 8 hours
Total Time 8 hours 10 minutes
Servings 8 people

Ingredients

  • 2 lb boneless pork loin
  • 3 large oranges
  • 1 small lemon
  • 1 cup salsa verde
  • 2 tsp salt
  • 4 tsp black pepper
  • ½ cup cilantro leaves chopped (optional)

Instructions

  • Spray Crockpot with cooking spray.
  • Place pork loin in bottom of Crockpot, cutting in half if needed, to ensure the meat does not touch the sides.
  • Place two of the oranges and the lemon in the microwave for 20 seconds. Remove and cut each in half.
  • Squeeze the juice of both oranges and the lemon over the top of the pork loin (watch for seeds!)
  • Pour salsa verde over top of pork loin and season with salt and pepper.
  • Peel the third orange and break into sections. Place sections around and on top of the pork loin. Sprinkle cilantro leaves on top.
  • Cook on low for 8 hours. Shred and mix in juices prior to serving.
