What I Cooked This Week: Casseroles, Burgers & Chicken Tacos

This week's menu included chiles rellenos casserole, chili dog casserole, honey mustard chicken sandwiches, burgers, chicken and rice, and soft chicken tacos.

This week was relatively calm around here, which is always nice. Senior year is in full swing, work has been busy, and I’m still chasing the puppy around while we continue to clean up from the storm.

We also had another home football game, so there was a little bit of running around, but overall it felt like a pretty normal week.

Dinner was a mix of easy family meals, a couple of casseroles, burgers, and Friday night where a pretzel was apparently dinner. Don’t judge.

Here’s what ended up on our table this week.

This Week’s Meals

Chiles Rellenos Casserole

This is one of those casseroles that makes a good weeknight dinner without being the same old thing. It was an easy way to switch things up a little this week. Plus, it’s a great way to use up extra eggs!

Chili Dog Casserole

Chili dog casserole was another easy dinner that everyone enjoyed. It’s definitely not fancy, but sometimes those are the meals that work best.

Honey Mustard Chicken Sandwiches

These Honey Mustard Chicken Sandwiches are a good option when you want something easy but don’t want another casserole or taco night.

They’re quick to put together and make an easy weeknight dinner

Burgers

We had burgers one night, which are always an easy choice around here. Put them on the grill, add whatever toppings everyone wants, and dinner is done.

Forgotten Chicken and Rice

This was a good comfort-food dinner for the week. Chicken and rice is always an easy combination, and this one is especially nice when you want dinner to mostly take care of itself.

Pretzel

Friday night dinner was a pretzel.

Don’t judge.

Soft Chicken Tacos

We finished the week with soft chicken tacos. Tacos are always a good option when I need dinner to be easy and everyone can make theirs the way they like it.
