This week was pretty uneventful around here, which isn’t a bad thing. It was mostly work, chasing the puppy, cooking dinner, and all the other normal stuff that fills up a week. Friday night’s football game was cancelled, so we ended up with a little more time at home than planned.
On Saturday, we headed to a university about an hour and a half away to watch the twins march in a high school band day. It was a fun way to end the week and definitely more exciting than anything else that happened around here.
As for dinner, we kept things pretty simple. There was pasta salad, chicken and rice, meatloaf, sandwiches, brats, and a sheet pan dinner. Nothing complicated – just meals that got everyone fed and kept me from spending the whole week in the kitchen.

Easy Italian Pasta Salad
This is one of those easy meals that works especially well when I don’t feel like doing much cooking. It’s simple, filling, and makes a good option for a busy week. Grab the recipe here.
Forgotten Chicken and Rice
Forgotten chicken and rice is always a good comfort-food dinner around here. It’s easy, filling, and the kind of meal that works when you just want something familiar for dinner.
Meatloaf
We had meatloaf one night, which is always a good excuse to make enough for leftovers. It’s not fancy, but it’s one of those dinners that just works.
Chicken Sandwiches
Chicken sandwiches made it onto the menu this week, too. They’re an easy option when I want something quick without making a whole production out of dinner.
Sausage Biscuit Sandwiches
We had sausage biscuit sandwiches for one of the meals this week. Breakfast-for-dinner type meals are always an easy win around here, especially when I don’t have a lot of time.
Brats
We kept another night really simple with brats. They’re one of those meals that require very little thought, which is sometimes exactly what I need.
Sheet Pan Kielbasa and Veggies
We finished out the week with sheet pan kielbasa and veggies. Everything goes on one pan, it’s easy to get in the oven, and there isn’t a pile of dishes waiting for me afterward. I’ll take that kind of dinner anytime.
