In large bowl, beat together eggs, yolks, milk, vanilla, cinnamon, nutmeg, and salt.
Heat 1-2 teaspoons of oil in a large skillet over medium heat.
Dunk each piece of bread into egg mixture, soaking both sides.
Place in skillet in small batches (2-3 slices) and cook until golden on both sides.
Layer 6 slices of cooked French toast, with sides touching, on a cookie sheet sprayed with baking spray.
Evenly spread apple pie filling on top.
Place remaining 6 slices on top of apple filling.
Bake at 350 degrees for approximately 10 minutes.
Serve hot with powdered sugar or topping (recipe in notes section.)
Notes
Crumbly topping: 1 cup brown sugar, 1/2 cup cold butter (cut up), 1 cup chopped pecans, 2 Tablespoons corn syrup. Cut butter into brown sugar until crumbly. Stir in pecans and corn syrup.
