Chicken Fiesta Salad
This easy, fully-customizabe salad is perfect on hot summer nights or packed for lunch.
Servings 4 people
Ingredients
- 1 head iceburg lettuce OR lettuce mix bag
- 1 large tomato diced
- 1 large red onion chopped
- 3 each green onions sliced
- 1 medium avocado diced
- 1 can corn with jalapenos (or regular) drained
- 4 ounces jar jalapenos sliced
- 12 ounces pre-cooked, refrigerated chicken strips diced
- 1 cup sharp cheddar cheese shredded
- 4 ounces fat-free French dressing
Instructions
- Tear lettuce into bite-sized pieces and divide among four plates
- Top each plate of lettuce with 3 ounces chicken.
- Layer ¼ of tomato, red onion, green onion, avocado, corn, jalapenos, and cheddar cheese on top.
- Drizzle each salad with 1 ounce of dressing prior to serving.
