Chicken Fiesta Salad

This easy, fully-customizabe salad is perfect on hot summer nights or packed for lunch.

Ingredients

  • 1 head iceburg lettuce OR lettuce mix bag
  • 1 large tomato diced
  • 1 large red onion chopped
  • 3 each green onions sliced
  • 1 medium avocado diced
  • 1 can corn with jalapenos (or regular) drained
  • 4 ounces jar jalapenos sliced
  • 12 ounces pre-cooked, refrigerated chicken strips diced
  • 1 cup sharp cheddar cheese shredded
  • 4 ounces fat-free French dressing

Instructions

  • Tear lettuce into bite-sized pieces and divide among four plates
  • Top each plate of lettuce with 3 ounces chicken.
  • Layer ¼ of tomato, red onion, green onion, avocado, corn, jalapenos, and cheddar cheese on top.
  • Drizzle each salad with 1 ounce of dressing prior to serving.

*omit avocado to reduce fat to 11 grams and 6.6 saturated fats*
