Roast Beef SOBs

I first had this delicious sandwich at a little diner in Williams, Arizona. Since then, it has become a staple in our family. If you need something simple for dinner, this is one of those meals I come back to again and again. It’s easy, doesn’t take much time, and works on busy nights.

Why This Meal Works

  • Quick to make
  • Simple ingredients
  • Easy to adjust to taste

How I Make It

  1. Heat up the roast beef
  2. Layer roast beef, Swiss cheese and jalapenos on a bun
  3. Serve

Here’s the simple version all in one place:

Roast Beef SOBs

Ingredients

  • 1 lb deli roast beeft sliced
  • 4 slices Swiss cheese
  • 4 buns

Instructions

  • In medium skillet, spread slices of roast beef around. Cook over medium low heat, stirring continuously for approximately 6-7 minutes.
  • Create 4 equal mounds of roast beef, top each with several jalapenos, and one slice of cheese. Allow cheese to melt slightly.
  • Remove and place on bun. Serve hot.

Notes

This sandwich got its name from a diner in Williams, AZ.  They have a similar sandwich on the menu.  I asked why it was called an SOB.  The server said its because when you bite into it, the jalapenos make you say “SOB.”
