What I Cooked This Week: Easy Family Meals for a Busy Week

This week's menu included BLTs, brats, smoked sausage pasta, taco pizza, and other easy family meals that helped us get through a busy week.

This week felt like one of those weeks where there was always one more thing to do.

On top of the normal work and keeping up with everything around the house, I had to make the hard decision to rehome one of our chickens. She was getting picked on by the others, and no matter what I tried, it just wasn’t getting any better. The good news is she’s now living her best life on another farm where she has plenty of space and a flock that’s a much better fit for her.

With all of that going on, dinner needed to be easy. Nothing fancy – just meals that got everyone fed without spending hours in the kitchen.

Bacon, Lettuce & Tomato Sandwiches

Summer tomatoes make BLTs hard to beat. Sometimes the simplest dinners are the ones everyone looks forward to the most.

Brats and Pasta Salad

This has become one of our favorite summer combinations. Throw the brats on the grill, pull the pasta salad out of the refrigerator, and dinner is done.

BBQ Chicken and Frozen Vegetables

Not every dinner has to be homemade from scratch. This was one of those nights where frozen vegetables were exactly the right choice, and nobody complained.

Smoked Sausage and Penne Pasta

This recipe has earned a permanent spot in our dinner rotation because it’s quick, filling, and always disappears.

Crescent Roll Taco Pizza

This is one of those recipes I keep coming back to because it’s easy, everybody likes it, and it doesn’t leave a sink full of dishes afterward.

Sometimes takeout is the meal plan.

Leftovers

Leftover night is probably one of the most underrated dinners around here. It clears out the refrigerator and means I don’t have to think about what’s for dinner for one night.
