What I Cooked This Week: Reubens, Brats, Pizza & Easy Summer Dinners

Do you ever have those weeks where dinner feels less like meal planning and more like putting out small fires all week long?

That was this week.

Nothing was particularly hard or stressful, but somehow the week still managed to get away from me. So dinner became less about trying new recipes and more about getting food on the table with as little effort and cleanup as possible.

Honestly, those weeks happen around here more often than not.

This week’s menu ended up being a pretty good mix of easy summer dinners, comfort food, and a couple of meals that everyone in the house is always happy to see.

Reubens

This was one of those dinners that feels a little more exciting than a regular sandwich night without requiring any extra work. Crispy bread, melty cheese, and absolutely worth pulling out the griddle for. After Troy and I stopped at Cleveland’s West Side Market where we found some amazing swirl Reuben and rye bread… these definitely need to be on the menu this week!

Brats

Summer and brats just belong together. These were easy, quick, and paired perfectly with whatever odds and ends we had in the refrigerator.

Egg Roll in a Bowl

This continues to be one of my favorite meals when I want something quick that doesn’t leave a mountain of dishes behind afterward.

Spinach Strawberry Salad with Chicken

One of my favorite summer meals. The strawberries make it feel a little fancy even though it comes together in just a few minutes.

Hawaiian BBQ Chicken Meatballs

These are one of those recipes that earn a permanent spot in the rotation because everyone eats them without complaint, which honestly deserves its own award.

Pizza

Pizza night happened because sometimes pizza night just needs to happen.
