What I Cooked This Week: Cozy Weeknight Dinners & Summer Favorites

This week's menu included jambalaya, steak sandwiches, T-bone steaks, chicken broccoli pasta, and other easy family meals that made dinner simple.

This week was one of those weeks where dinner didn’t have a theme – it was just whatever sounded good that day. A little grilling, a little comfort food, one frozen pizza night, and leftovers to clean out the refrigerator.

Here’s what ended up on our table this week.

This Week’s Meals

Jambalaya with Shrimp and Sausage

This was one of those meals that tastes like it was an all-day affair – but seriously, a box of dirty rice and some sausage and shrimp, and dinner is served. There is usually leftovers too, so win-win.

Frozen Pizza

Sometimes frozen pizza is the way to go. No prep. No clean up if you put it on aluminum foil! And, dinner is on the table in no time.

T-Bone Steaks and Baked Potatoes

We grabbed some T-bones from the quarter side we bought this spring, paired them with a baked potato. I even sautéed some mushrooms and onions as a topper. Delicious.

Steak Sandwiches

These were a nice change from our usual burgers. We had chips on the side – an easy dinner without much extra effort.

Chicken Broccoli Pasta

This meal is easy, filling and everyone enjoys it.
