What I Cooked This Week: Weeknight Dinner Ideas for a Busy Summer Week

This week's menu included cheeseburgers, BBQ ham sandwiches, Hawaiian BBQ chicken meatballs, and other easy weeknight dinner ideas that kept life simple.

I don’t know about you, but by the time this part of summer rolls around, I find myself reaching for the meals I know everyone will eat without a second thought.

This week was full of simple dinners, grilling outside whenever we could, and one evening where we enjoyed a picnic potluck instead of cooking. Nothing fancy—just good food that fit into a busy week.

This Week’s Meals

Cheeseburgers

You really can’t go wrong with cheeseburgers in the summer. Throw them on the grill, add everyone’s favorite toppings, and dinner is done.

BBQ Ham Sandwiches

This has become one of those easy meals I forget about until I make it again and wonder why I don’t make it more often. It’s quick, filling, and perfect for a busy night.

Brats and Pasta Salad

Brats and pasta salad are one of my favorite summer combinations. The grill does most of the work, and the pasta salad is always even better after it’s been in the refrigerator for a while.

Quesaritos

These are always a fun change from our usual taco night. Everyone can customize them, which means dinner is easy for me and everybody leaves happy.

Hawaiian BBQ Chicken Meatballs

These Hawaiian BBQ Chicken Meatballs have earned a permanent spot in our dinner rotation. They’re easy enough for a weeknight but feel a little different than the meals we make all the time.

Easy Chicken and Broccoli Bake

Some weeks just call for a good casserole. This one was simple, comforting, and made enough for leftovers, which is always a bonus.

Picnic Potluck

We wrapped up the week by heading to a picnic potluck instead of cooking dinner. It was nice to spend time visiting, try a little bit of everything, and let someone else do the cooking for a change.
