What I Cooked This Week: No Cook Summer Meals

It has been hot this week without air conditioning, so I tried to keep meals as simple as possible. The less cooking required, the better. These are my easy no cook summer meals that I go to every time.

This week was mostly easy meals, minimal prep, and anything that didn’t require standing over the stove for an hour. Here’s to hoping to a cooler week and a HVAC repair person that shows up.


Monday

Simple and easy – use pre-cooked bacon and you don’t even need to turn on the stove!

Tuesday

Having chickens, anything with eggs is a go-to. Buy yourself an egg cooker – it’s a lifesaver!

Wednesday

Chicken Fiesta Salad

This is so simple to throw together with refrigerated chicken strips.

Thursday

Ham and Turkey Pinwheels with garlic + herb cream cheese spread

Friday

Chicken Salad Sandwiches

Saturday

Pizza

Sunday

Store-bought pasta salad
